gopi chai was lovingly founded and created by jo wood.

jo has had an extraordinary life journey. the foundation of her career was as a professional chef in victoria for 18 years. during this time she worked in award winning restaurants, including stephanie’s - where a greater learning of food, taste & cooking was gained from her mentor stephanie alexander. jo then went on to become chef and co owner of her own highly successful restaurant in melbourne for many years.

broadening her knowledge of food and life through extensive overseas travel she developed an interest in many natural and complementary therapies. during this time she was particularly drawn to the indian natural healing system ayurveda and it’s approach to how foods and spices can be used in healing. jo’s passion for food, health & wellbeing had all merged!

as jo started leading a healthier lifestyle herself, she began exploring alternatives to coffee and started grinding her own blend of whole spices into her own special chai - it is from these humble beginnings that gopi chai emerged.

jo is passionate about increasing awareness about traditional chai compared to instant versions sold as chai lattes and made with syrups or powders. through gopi chai she provides a heartfelt, gourmet experience that delights even the most refined chai connoisseur...

history of chai

chai originated over 5000 years ago in india. it’s roots can be traced to the ayurvedic healing system, where a combination of spices and black tea were used for health benefits. chai is not only a daily beverage in india, but also a part of their natural medicine system to promote good health.

street vendors called wallahs serve chai in clay cups called kullarhs, that the wallahs make on the spot in an open fire. when a person has finished drinking their chai, they break the clay cup on the ground, returning it to the earth and it’s former state - without harming the environment.

chai is now popular all around the world and the term is commonly used to describe a variety of spiced tea’s and instant drinks. as people become increasingly aware about health and more conscious consumer options, many are now seeking out a more authentic chai experience such as gopi chai
